Dr. Kimon Andreas Karatzas is Assoc. Professor in Food Microbiology at the University of Reading. His research focuses on the understanding of the molecular mechanisms of microbial stress resistance focusing on traditional (acid treatment, oxidative stress etc.) and novel food processing technologies such as High Hydrostatic Pressure etc. He also works on antimicrobial compounds and their possible use to ensure safety of various products as well as resistance mechanisms microbes use to survive and grow in their presence.
He has published more than 57 papers on food microbiology, food safety, food fermentations and food processing.
